Wild Ramp, Pacific Cod & Jicama Ceviche

serves (6)

1# wild pacific cod, boned, trimmed and minced
2 ounces jicama, small diced
6 cleaned ramps, greens & whites thinly sliced
1 jalapeño, seeded & small diced
2-3 limes zested & juiced
Salt & white pepper to taste

15 minutes before serving combine all the ingredients above and season taste. Use more lime juice as necessary. Serve with the avocado purée, corn or flour tortilla chips.

Avocado & Olive Oil Purée:

1 ripe avocado
¼ cup extra virgin olive oil
Juice from 1 lime
Salt to taste

Purée the avocado & lime juice in a blender. While blending, add the olive oil in a steady stream to emulsify. Season to taste with salt.
